Cucumbers for the winter with apple cider vinegar
Ingredients
- 600 G cucumbers fresh, not overripe
- 1/2 Art. apple cider vinegar
- 1 bunch greenery a fresh sprig of dill, basil, tarragon - 1/2 sprig each, several currant or cherry leaves, 2 bay leaves
- 3 clove garlic
- 120 G Sahara
- 1 l water
- 1.5 tbsp table salt
- 3 peas black and allspice
- 1/2 tsp mustard seeds
Instructions
- Bring the water to a boil and prepare the jars. Wash all the cucumbers, trim off the ends, and cover them with cold water.
- Place all the herbs and garlic at the bottom of the sterilized jars.
- Pack the cucumbers tightly into the jar, leaving as little space as possible.
- Carefully, pour boiling water into the jar in a thin stream. It should cover all the cucumbers. Let it sit for 7 minutes.
- Boil the water again, drain the water already poured into the jar and repeat the procedure.
- Prepare the marinade. Add sugar, salt, pepper, and mustard to cold water. When the water boils, add vinegar.
- Drain the water from the jar and pour in the prepared marinade.
- Roll up the jar, turn it upside down, and cover with a towel. Let it cool for at least 24 hours, then store it in a cool place.
Note
- 1) Apple cider vinegar can have different concentrations. The recipe specifies the amount for 6% vinegar; if yours is higher or lower, you'll need to adjust the volume.
- 2) To ensure long-term storage of the preserves, one of the most important steps is preparing the jars. Therefore, they must not only be placed in boiling water or steam for 15 minutes, but also thoroughly rinsed with baking soda beforehand.
- 3) The sudden temperature change when pouring boiling water can cause the jar to crack. To avoid this, pour the water in a thin stream into the center of the jar, being careful not to touch the sides.
- 4) If desired, you can add other herbs and spices – horseradish leaves, dill umbrellas, cloves and coriander.
- 5) If you are preparing not just one jar, but a whole series, then for convenience and savings, you can reuse the water instead of pouring it down the sink, including for making marinade.
