Antonovka apple compote
Ingredients
- 1 kg apples
- 250 G Sahara
- ½ tsp vanilla sugar
- 2 l water
- 2 pcs. carnations
Instructions
- Prepare the required ingredients for compote for a 3-liter container.
- Wash the fruit thoroughly and divide into slices, removing the core.
- Pour 2 liters of water into a saucepan. Add cloves, vanilla, and regular sugar to the liquid.
- Boil the contents for two minutes.
- Place the prepared apple pieces in the syrup and simmer for about five minutes.
- Rinse the container and sterilize it over steam. Be sure to boil the lid in a saucepan.
- Carefully spoon the apples into the jar and pour in the remaining syrup.
- Cover the jar with a lid and place it in a saucepan with the liquid, lining the bottom with a towel. Once the water boils, sterilize for 25 minutes. Then wrap the jar and let it cool.
- Store the cold compote in the basement.

Antonovka jam
Ingredients
- 1 kg apples
- 1.2 kg granulated sugar
- 1 tsp salt (/liter of water)
- 2 tsp soda (/liter of water)
Instructions
- First, wash the apples. You can peel them if you like.
- Cut the fruit into wedges, removing the core. Submerge the pieces in salted water. This will prevent the cut apples from browning. Then rinse the fruit and soak them in baking soda for 5-6 minutes. This will prevent the apples from becoming overcooked.
- Rinse the fruit again in clean water and sprinkle with granulated sugar. Leave it alone until the mixture releases its juice.
- Place the pan with apples on the fire and bring to a boil.
- Cook for five minutes, counting from the moment it boils, in three stages. Allow 6 hours between each stage.
- Then pour the delicious jam into sterilized jars and seal with lids. Store the cooled jam in the cellar.

Antonovka juice
Ingredients
- 3 kg Antonovka apples
- 1 Art. granulated sugar
Instructions
- Rinse the fruit thoroughly under the tap.
- Cut the apples into wedges, removing the core and seeds.
- Pass the peeled apple pieces through a juicer.
- Take a large saucepan and pour the resulting liquid into it.
- Place the pan with the mixture on the stove and wait until foam appears on the surface. Remove the pan from the stove and skim off the foam.
- Once the foam has completely skimmed off, add sugar to the juice.
- Place the container back on the stove and heat until bubbles appear.
- Turn off the heat and pour the juice into jars.
- Roll up the lid, turn the container upside down, cover with a warm blanket and leave until completely cool.
