Eggplant caviar with apples
For those who appreciate original and low-calorie food, we offer a recipe for caviar made from eggplant and apples. It can be served as an appetizer, or paired with a side dish, it can be used as a main course.
- 2 large eggplants
- 3 apples
- 1 bulb
- 4 tbsp olive oil
- 2 tbsp vinegar
- 1 tsp Sahara
- pepper (to taste)
- salt (to taste)
Wash the eggplants, cut them in half, and then dice them into small cubes. Peel the apples and chop them finely. Chop the onion.
Heat olive oil in a frying pan and fry the onion until golden brown.
Add eggplant and apples, stir and cook over medium heat until vegetables are soft.
Add vinegar, sugar, salt and pepper to taste, mix everything.
Cook for another 5 minutes, stirring constantly, and the caviar is ready.
To make the caviar smoother, use a blender and puree the vegetables.
To add more piquancy to the dish, you can add finely chopped fresh ginger along with the onion.
If you want to make the caviar spicier, add red pepper.
The caviar can be served hot or cold, if desired.
When working with eggplant, you can use gloves to avoid staining your hands with the color of the vegetable.
