Wash the fruit and berries thoroughly. You can use any variety of apples, but they should be less tart to ensure a balanced flavor.
Sort the sea buckthorn. Remove any deformed, wrinkled, or damaged berries, and discard the stems. Cover the sea buckthorn with water, then rinse and drain. Repeat this process several times.
Place the sea buckthorn in a saucepan. Rinse the apples thoroughly under running water, then cut each into quarters (remove the core and seeds). If you bought the apples at the store, you'll need to peel them.
Place sugar, citric acid, and apples in a saucepan. Then add warm water, place the saucepan on the stove, and bring the drink to a boil.
Once the compote boils, reduce the heat and let the drink simmer for another 10–15 minutes.
As soon as the sea buckthorn berries and apple slices have given up all their aroma and flavor to the compote, turn off the stove.
Sterilize several jars over steam, and do the same with the lids.
Let the compote cool slightly. Then pour it into jars and tighten the lids using the threads or a canning wrench. Wait until the contents of the jars have cooled completely, and then store the jars in a cool, dark place (such as a pantry). You can also store the compote in the refrigerator.
Apple and sea buckthorn compote can be served either chilled or hot. The drink retains its beneficial properties and will appeal to both adults and children.
