Take a deep bowl for the dough. Beat the eggs with salt with a mixer for about two minutes, until fluffy. Add granulated sugar and vanilla.
Beat the mixture thoroughly until it becomes white and fluffy. Add the vegetable oil and mix with a spatula or a mixer at medium speed.
Sift flour and mix thoroughly.
Wash the apples, peel and core them, coarsely grate them, and drain the juice. Line a baking sheet with parchment paper. Spread the apple mixture over the apples and smooth it out. Sprinkle with cinnamon. Pour the batter over the apple mixture, smoothing it out with a spatula.
Place the baking sheet in an oven preheated to 180°C. Bake the sponge cake until done, about 25 minutes.
Remove the baking sheet. Cover the sponge cake with parchment paper, turn it over, and roll it up while it's still hot.
Leave rolled up in paper until completely cool.
Trim the edges of the roll evenly. Sprinkle the top with powdered sugar. You can decorate with canned fruit, berries, chocolate, or caramel.
