A simple recipe for sponge roll with apples

Ingredients
  

  • 5 eggs
  • salt on the tip of a knife
  • 120 G granulated sugar
  • 8 G vanillin
  • 70 G vegetable oil
  • 120 G wheat flour
  • 0.7 kg peeled apples
  • a pinch of cinnamon

Instructions
 

  • Take a deep bowl for the dough. Beat the eggs with salt with a mixer for about two minutes, until fluffy. Add granulated sugar and vanilla.
  • Beat the mixture thoroughly until it becomes white and fluffy. Add the vegetable oil and mix with a spatula or a mixer at medium speed.
  • Sift flour and mix thoroughly.
  • Wash the apples, peel and core them, coarsely grate them, and drain the juice. Line a baking sheet with parchment paper. Spread the apple mixture over the apples and smooth it out. Sprinkle with cinnamon. Pour the batter over the apple mixture, smoothing it out with a spatula.
  • Place the baking sheet in an oven preheated to 180°C. Bake the sponge cake until done, about 25 minutes.
  • Remove the baking sheet. Cover the sponge cake with parchment paper, turn it over, and roll it up while it's still hot.
  • Leave rolled up in paper until completely cool.
  • Trim the edges of the roll evenly. Sprinkle the top with powdered sugar. You can decorate with canned fruit, berries, chocolate, or caramel.

Note

The following tips will help make the roll airy and delicious:
The baking temperature and time for the roll depend on the oven's power and may differ from those specified in the recipe. The optimal baking temperature is 180–200°C.
— Don't roll the sponge cake too tightly, otherwise the apple filling will come out and the cake will crack.
— It's not recommended to overbeat eggs for sponge cake batter. The surface of properly beaten eggs with granulated sugar (before adding flour) should be fluffy, with a yellowish tint, and filled with air bubbles. Otherwise, the sponge cake will rise poorly or not at all.
— The amount of sugar can be adjusted to suit your personal taste. It also depends on the sweetness of the apples. Honey or any sugar substitute can be used instead of granulated sugar.
