New Year's Eve Salad

The name of this juicy appetizer speaks for itself. This salad is sure to be a hit on the New Year's table.

  • 200 G herring (salted, fillet)
  • 400 G potatoes
  • 500 G beets
  • 300 G carrots
  • 250 G cucumbers (salty)

  • 1 bunch greenery (dill, parsley)
  • 3 pcs. chicken eggs
  • 6 pcs. quail eggs

Instructions
 

  • First, boil the potatoes, beets, carrots, and eggs.
  • Cut the onion into half rings. It's best to slice it thinly so that the flavor doesn't overpower the other vegetables.
  • Mix vinegar and sugar and pour the mixture over the chopped onion. Let it sit for 5 minutes to marinate, then squeeze out any remaining marinade.
  • Cut the herring fillet into pieces, then grate the potatoes, beets, and carrots (save one or two carrots for garnish). Do the same with the apples.
  • Grate the chicken eggs along with the cheese and cut the cucumbers into cubes.
  • Now that all the ingredients are chopped, you can begin layering the salad. The order will be as follows: Layer 1 – herring, Layer 2 – onion, Layer 3 – beetroot, Layer 4 – mayonnaise, Layer 5 – cucumbers, Layer 6 – grated carrots, Layer 7 – more mayonnaise, Layer 8 – grated apples, Layer 9 – sprinkle with cheese, Layer 10 – potatoes, Layer 11 – more mayonnaise, Layer 12 – eggs. Top this multi-layered salad with finely chopped herbs and garnish with quail egg halves.

  • Rinse the chicken breast, then cover with boiling water and cook until fully cooked. Cool the meat before slicing.
  • Peel the onion, wash it, and then cut it into small cubes.
  • Heat a frying pan and add a little vegetable oil. Add the chopped onion and fry, stirring constantly. Cook over medium heat until golden brown.
  • Grate the eggs, wash the apples, peel them, remove the core and grate them too.
  • Cut the chicken breast into cubes or separate the fibers with your hands, whichever you prefer.
  • Grate the cheese on a coarse grater.
  • Take the butter out of the freezer and grate it while it is still in this state.
  • Remove the shells and husks from the nuts, lightly dry them in a dry frying pan, and then chop them into small pieces with a knife.
  • Now you can lay out the ingredients layer by layer: 1 layer - chicken meat, 2 layer - onions, 3 layer - grated apples, 4 layer - grated cheese, 5 layer - grated butter, 6 layer - nuts, 7 layer - chicken eggs.
  • This salad should be refrigerated for a couple of hours before serving. You can garnish it however you like, for example, with boiled carrots, herbs, etc.

  • By to taste mayonnaise
  • For decorations green onions

Instructions
 

  • Potatoes and chicken eggs are boiled, cooled and peeled in advance.
  • Boiled potatoes are grated on a coarse grater or cut into thin strips, whichever you prefer.
  • The apple is peeled and grated on the coarse side of a grater or cut into thin strips.
  • Squid and pickled cucumbers (you can remove the skin from them) are cut into strips.
  • Olives and eggs are cut into small pieces.
  • Combine all chopped ingredients in a large salad bowl, then add the green peas. Gently mix all ingredients together.
  • Dress the resulting salad with mayonnaise, but do not stir! Stir the salad when you're ready to serve.
  • You can decorate the dish however you like. The easiest way is to arrange a Christmas tree made of green onions with a beetroot or tomato star on the surface.

Christmas Wreath Salad

  • 250 G crab sticks
  • 155 G corn (canned)
  • 100 G boiled rice
  • 1 pcs. apples
  • 1-2 pcs. tomatoes (fresh)
  • 50 G hard cheese
  • 1 bunch fresh dill
  • By to taste mayonnaise
  • By to taste salt
  • By to taste ground black pepper (ground)

Instructions
 

  • Cook the rice in salted water until done, then drain it in a sieve and rinse under running water.
  • In a deep bowl, combine the cooled rice with diced crab sticks. Save a couple of the sticks for later garnish (we'll use them to make candles for the holiday wreath).
  • Cut the tomatoes into 4 pieces, remove the liquid and seeds, and cut the pulp into cubes approximately the same size as the crab sticks.
  • Peel the apples and cut into small cubes.
  • Add cheese (grate it on a coarse grater) and corn from the can (be sure to drain the liquid!) to the chopped ingredients.
  • Mix everything thoroughly, add spices and mayonnaise.
  • Now take a large flat plate and place an inverted glass in its center. Begin to arrange the crab salad in a ring around the glass. Press it down lightly with the back of a spoon.
  • Place crab stick "candles" and tomato slices on top of the salad. Sprinkle with finely chopped dill to form a wreath. You can also add a few corn or pomegranate kernels.

  • 3-4 pcs. potatoes
  • 2 pcs. carrots
  • 1 jar green peas (canned)
  • 300 G boiled sausage (Doctor's)
  • 1 pcs cucumber (fresh)
  • 2 pcs chicken eggs
  • 1 pcs apples (mandatory green)
  • 1 bunch green onions
  • By to taste mayonnaise
  • By to taste salt
  • For design dill, pomegranate seeds, corn

Instructions
 

  • Boil the potatoes, eggs, and carrots in advance. Peel and cool them.
  • Now, cut the apple, carrot, eggs, cucumber, and sausage into small cubes. Mix everything with green peas, chopped onion, salt, and mayonnaise.

  • 3 tbsp canned corn
  • 40 G hard cheese
  • 0.5 breasts chicken (fillet)

Instructions
 

  • First, you should boil the rice in salted water until fully cooked.
  • Cut the crab sticks in half. Separate the white flesh from the red shell (it's not needed), and finely chop the red shell.
  • Boil the chicken fillet and then cut into small pieces.
  • Wash the apple and cut it into quarters. Cut each quarter into strips and then into cubes.
  • Now place the sliced ​​apples on a flat plate. Try to do this carefully to form a circle. Spread mayonnaise on top.
  • Next, place the sliced ​​chicken on top, and then the corn. Grease everything again with mayonnaise.
  • Sprinkle finely grated cheese over the mayonnaise layer. Now visually divide Santa's future face into three sections. Fill the top section with red crab sticks, and shape the bottom section into a beard using rice. Don't forget to coat everything with mayonnaise before layering.

  • 100 G hard cheese

  • 1 jar canned sardines (in oil)

Instructions
 

  • Select a rectangular container or mold for preparation. Line the mold with plastic wrap (use extra). Grease the wrap with mayonnaise. Layer the ingredients in reverse order, as the salad will need to be inverted onto a plate at the end.
  • Hard-boiled eggs should be separated into whites and yolks. Grate the whites directly into a baking dish and coat them with mayonnaise.
  • Peel the apple and grate it into whites.

  • We compact everything thoroughly, and then put everything in the refrigerator for a couple of hours.
  • Prepare the salad decorations in advance. Cut out numbers and letters from carrots, and then trim the remaining components for the calendar base.
  • Remove the salad from the refrigerator, invert it onto a plate, and remove the pan and plastic wrap. Now arrange the decorations to form a festive calendar. Your salad is ready!
