Kvass from dried apples
Most people are accustomed to the idea that kvass is exclusively made with bread. However, this refreshing drink is actually prepared in a variety of ways, and not always with a bread base. Kvass made with dried apples has a pleasant tartness that can quench your thirst even on the hottest summer day. Of course, you can use fresh apple peels for this recipe, but many prefer to use dried fruits, which are much easier to store.

A simple recipe for kvass from dried apples
Ingredients
- 170 G dried apple slices
- 100 G granulated sugar
- 5 G dry yeast
- 2.5-3 l filtered water
Instructions
- First, prepare all the ingredients on the counter. Place the apples on a baking sheet and bake in a preheated oven at 180 degrees Celsius for 6-7 minutes. The apple slices should be lightly browned.
- Next, take a 1.5-liter jar. Place the browned apples in this jar, press them down lightly (but not too much), and then pour boiling water over them. Stir the contents with a spoon and let them sit for 8-10 minutes. During this time, the apples will have absorbed enough water, so you'll need to top up the jar to the top.
- After this, close the container with a tight lid and leave to infuse for 90 minutes.
- Then add sugar to the container, stir well, and let it sit for another 20 minutes. All the sugar should dissolve.
- Next, strain the contents of the container. The apple pulp can be discarded; it won't be needed in this recipe.
- Add the yeast to the broth and mix thoroughly. By the time you add the yeast, the water should still be warm, about 30–35 degrees Celsius.
- Pour the prepared decoction with yeast and sugar into a clean, larger container and add about 1–1.5 liters of warm water.
- Cover the container with gauze and leave its contents to infuse for 3–5 hours at room temperature.
- After the specified time has passed, shake the jar. Foam should appear on the surface of the drink, indicating that the kvass is ready and ready to be enjoyed. Remember that a properly prepared drink should not have a pronounced yeasty flavor.
- The finished drink can be placed in the refrigerator to cool and then served.
Note
- If you want the kvass to acquire a deep dark color, you can add burnt sugar to the drink.
- Some people use fruit puree in addition to dried fruit to add variety to the finished drink's flavor. You can experiment with the ingredients, as well as the amount of sugar (to promote more active fermentation and enhance the flavor).
- The carbonation of the drink directly depends on the temperature at which fermentation occurs. So, the warmer the room temperature, the more effervescent the finished kvass will be. This is worth considering if you have a preference.
