Prepare all ingredients. Wash the apples and dry them thoroughly.
Melt the butter in a frying pan. Once it becomes liquid, add the sugar and mix thoroughly.
Grate the apples on a coarse grater (you can leave the skin on) and add to the frying pan with sugar and butter. Advice: You can slice or dice the apples instead of grating them. The taste won't change.
Simmer the apple-butter mixture for 3 minutes over medium heat. Stir occasionally to prevent burning.
Add cinnamon and vanilla to taste and mix thoroughly. Advice: Don't wrap the filling right away. Let it cool a little.
Cut the lavash into squares approximately 15 x 15 cm (if the proportions are not maintained, don’t worry, your envelopes may be larger or smaller than those we make).
Lightly beat the egg in a deep bowl - this will be our egg batter.
Place about 1 tablespoon of apple-cinnamon filling on the edge of each piece of lavash.
Form an envelope from the lavash.
Repeat the process with the remaining squares. We now have 12 pieces.
Now dip the lavash in the egg batter.
Heat a little vegetable oil in a frying pan and fry the ingredients over medium heat until they're a nice golden brown.
