Sift flour into a deep bowl.
Cool the butter, cut into several pieces and rub with flour into crumbs.
Place cottage cheese and vanilla sugar in a bowl.
Knead the dough (depending on the density of the cottage cheese, it is permissible to add a small amount of flour, but not more than 50 g).
Leave the dough in the refrigerator for half an hour, after wrapping it in cling film.
Wash the apples, peel them, remove the seeds, cut them into thin slices, sprinkle with cinnamon and sugar.
Remove the dough from the refrigerator and roll it out to a thickness of 2.5–3 mm.
Using a glass or a special mold, cut out circles.
Place apple slices on each half and cover with the other half. Press the edges with a fork.
Line a baking sheet with parchment paper and place the dough on it. Place in an oven preheated to 180ºC.
Bake for 20–25 minutes.
After the allotted time, remove the cookies from the oven, let them cool and sprinkle with powdered sugar.
