Prepare the necessary ingredients for a regular pancake batter.
Place sugar, salt, eggs in a deep bowl and beat with a whisk.
Add the milk and vegetable oil. Gradually add the baking soda and flour and mix the dough thoroughly.
Then pour in the boiling water. The flour should start to boil when you add the boiling water. This will make the pancakes elastic.
Use a pancake griddle to make thin pancakes, frying them until golden brown on both sides. Flip them over with a spatula.
Stack freshly baked pancakes on top of each other and cover to prevent them from drying out.
Prepare the filling. Place the butter and sugar in a hot frying pan. Once the butter has melted, stir it into the sugar.
Cut the apples into cubes, first removing the core and skin.
Place the apple pieces in a frying pan and simmer for 10 minutes. The pieces will shrink during this time.
Add ground cinnamon.
Soak the raisins in hot water for ten to fifteen minutes. This will soften them. Then stir in the apples and simmer for another two minutes.
Place the cooled filling on the pancake and roll it into an envelope or roll. Roll each pancake in this manner.
If desired, fry the pancakes in a frying pan with butter. Serve warm. Serve with sour cream or berry topping. Enjoy your tea!
