Prepare all the necessary ingredients for baking the pies.
Place the yeast in warm water, let it dissolve, and add one teaspoon of sugar. Let it sit for fifteen minutes.
In a deep dish, mix salt (1/4 tsp) with vanilla and the remaining granulated sugar.
Add softened butter and the prepared yeast mixture. Stir the dough with a spoon. When it becomes difficult to knead, add 2 tablespoons of vegetable oil and continue kneading with your hands.
The finished dough will be soft and slightly sticky. Form the dough into a round shape and place it in a bowl. Cover with a towel and let it rest in a warm place for an hour.
Meanwhile, prepare the pie filling. Rinse the dried apples thoroughly under running water. Then, place them in a saucepan. Pour in the water until the apples are completely submerged. Then, place the pan over medium heat and simmer for 30 minutes.
Place the cooked filling in a colander and let the liquid drain.
Using a meat grinder or blender, grind the ingredients into a smooth paste. Add sugar to the filling and mix well.
After about an hour, the dough should have risen. Now press it down a little.
Make pies from the prepared dough. Divide the dough into 9-10 portions. Roll each portion into a flatbread and place the filling on each portion. Form the pies.
Line a baking sheet with parchment paper and place the formed pies on it. Make two slits in each. Cover the baking sheet with a towel and let it rest for 10-15 minutes. Meanwhile, turn on the oven and preheat it to 180°C. Brush the pies with beaten egg yolk. Bake for 20-25 minutes. Remember to take your oven's settings into account; baking time may vary.
When the pies are done, remove them and place them on the prepared dish. Serve slightly chilled.
