Mash the cottage cheese thoroughly in a bowl with a fork, then combine the cottage cheese, eggs, and sugar. Beat with a mixer until smooth. (You can add 100 ml of kefir or milk to the dough instead of two eggs.)
In a separate bowl, mix flour, baking powder and salt.
Gradually add the flour mixture to the bowl with the curd mixture and mix thoroughly until a stretchy dough forms. The dough will be quite thick. You may not need all the flour.
Wash and peel the apples.
Remove the core.
Grate the apples on a fine grater.
Add grated apples to the dough and mix.
Let the dough sit for a bit to allow the apples to soak.
Heat a frying pan well and add a small amount of vegetable oil or butter.
Using a tablespoon, drop the dough onto the pan, forming small patties.
Fry the pancakes over medium heat until golden brown on both sides, about 2–3 minutes.
Continue the process, adding oil to the pan as needed.
