Ingredients
  

  • 200 gr cottage cheese
  • 2 pcs eggs (can be replaced with kefir or milk, 100 ml)
  • 2 tablespoons sugar
  • 100 gr flour
  • 1-2 pcs apples
  • 1 pinch salt
  • 0.5 teaspoon baking powder or soda
  • oil (vegetable or butter - your choice) for frying

Instructions
 

  • Mash the cottage cheese thoroughly in a bowl with a fork, then combine the cottage cheese, eggs, and sugar. Beat with a mixer until smooth. (You can add 100 ml of kefir or milk to the dough instead of two eggs.)
  • In a separate bowl, mix flour, baking powder and salt.
  • Gradually add the flour mixture to the bowl with the curd mixture and mix thoroughly until a stretchy dough forms. The dough will be quite thick. You may not need all the flour.
  • Wash and peel the apples.
  • Remove the core.
  • Grate the apples on a fine grater.
  • Add grated apples to the dough and mix.
  • Let the dough sit for a bit to allow the apples to soak.
  • Heat a frying pan well and add a small amount of vegetable oil or butter.
  • Using a tablespoon, drop the dough onto the pan, forming small patties.
  • Fry the pancakes over medium heat until golden brown on both sides, about 2–3 minutes.
  • Continue the process, adding oil to the pan as needed.

Note

Cottage cheese pancakes with apples can be served warm or at room temperature. Serve them with sour cream, berries, honey, jam, or ice cream.
Choose fresh cottage cheese, it’s better to take 9%.
Knead the dough until it reaches a homogeneous consistency; it should be smooth and without lumps.
It's best to heat the pan over medium heat to ensure even heating. This will ensure a delicious crust when frying.
Grease the pan well with oil to prevent the pancakes from sticking.
Don't flip the pancakes too often. Wait until one side is browned before turning them over.
Experiment with flavors. Try adding vanilla and cinnamon.
