Fig from apples
Fig is a type of pastila. Pastila is usually made from various fruits and berries. Apple fig has a unique flavor. It's made not by whipping, but by boiling apples with the addition of other fruits/berries and sugar. Fig is denser than regular pastila.

Ingredients
- 2 kg apples
- 500-700 gram strawberries
- 2 tablespoons Sahara
- 1/2 teaspoon cinnamon
Instructions
- The apples need to be peeled, core removed, and cut into fairly large pieces.
- Take a large saucepan and fill it one-third with water. As the water evaporates during cooking, you can add a little more.
- Add apples and strawberries to the water and cook, covered, until soft (about 15–20 minutes). Heat at medium heat.
- Using an immersion blender, puree the fruit. A sieve can also be used if you don't have a blender.
- In the same saucepan, bring the fruit puree to a boil. This process takes about an hour, preferably over medium heat, with the lid on all the way. Stir constantly while cooking.
- Add sugar and cinnamon toward the end of cooking. The puree should reduce by half and have a consistency similar to sour cream.
- Line a baking sheet with parchment paper and spread the mixture on top. The layer should be about one centimeter thick.
- Preheat the oven to 80 degrees Celsius and dry the figs for about 4–6 hours. Keep the oven door ajar at all times.
- To determine if the figs are ready, touch them carefully to avoid burning yourself. The finished dessert should not yield to finger pressure and should not be sticky. If desired, after 4-6 hours, the figs can be left to rise overnight in a turned-off and closed oven.
- Remove the figs from the oven and peel them off the parchment paper. Next, cut them into pieces and roll them in any convenient way. Most often, people roll them into tubes.
- Figs should be stored in a dry place and it is best to package them in bags beforehand.
Note
- Stick to the above amounts of ingredients for one standard baking sheet. If you make the layer too thin or too thick, there's a risk of the figs either burning or not baking properly.
- Boil the fruit puree until it reaches the desired consistency. It should be similar to sour cream.
- If desired, you can omit the sugar and cinnamon, as the fruits and berries are sweet on their own.
