Apple Sambuca

Apple Sambucus
Ingredients
- 2 sweet and sour apples
- 2.5 tbsp Sahara
- 1 tbsp gelatin (incomplete)
- 1 egg
- 190 ml water
Instructions
- First, wash the apples thoroughly, remove the peel and core.

- Cut the apples into small cubes and simmer in a heavy-bottomed saucepan with 5 tablespoons of water and half the sugar until soft. Stir occasionally. If desired, you can bake the apples in the oven until soft instead of simmering.

- Pour 80 ml of cold boiled water over the gelatin and leave to swell for 20 minutes.

- Add the remaining sugar to the prepared apples and puree everything with a blender.

- Finally, dilute the almost-ready gelatin with 110 ml of hot boiled water and dissolve all the granules. Add the applesauce to the mixture and stir.

- Separate the egg white from the yolk. Whip the egg white until stiff peaks form. It shouldn't drip off when you turn the bowl upside down.

- Using smooth movements, gradually add the protein to the apple mixture.

- Pour the almost ready sambuca into small bowls and refrigerate for 2-3 hours.

- Garnish the finished dessert with thin apple slices. If desired, serve the sambuca with your favorite berries, coconut flakes, or any colorful sprinkles.
