Homemade apple marshmallows
Ingredients
- 5 pcs. apples
- 725 G sugar sand
- 160 ml water
- 1 pcs. chicken egg white
- 2 tbsp agar-agar (without slide)
- 1 pinch vanilla sugar
- 3 tbsp powdered sugar
Instructions
- Wash the apples and cut them into halves. Bake them in the oven for 15 minutes at 180°C.
- While the fruit is still hot, scoop out the pulp with a spoon and puree it. Use a sieve or an immersion blender for this. The puree should be smooth, uniform, and thick.
- Measure out 250 g of applesauce. While it's still warm, add 250 g of granulated sugar and vanilla. Stir. Leave the apple mixture on the counter until it cools completely.
- Place a saucepan with agar-agar dissolved in cold water over the stove. Heat the contents and add the remaining granulated sugar (475 g).
- Cook the syrup for 5 minutes, stirring constantly with a spoon. Keep the heat low. Remove from the heat and let cool slightly.
- Place the applesauce in a deep bowl. Add half of the chilled egg whites. Beat with a mixer on medium speed until the mixture turns pale. Add the remaining egg whites and continue beating with a mixer at high speed. The mixture should be smooth, voluminous, and thick.
- With the mixer running, slowly pour in the hot syrup. Beat the mixture at high speed for another 2–3 minutes, until it becomes very thick.
- Pipe the marshmallows onto a parchment-lined tray using a pastry bag. You should have 54 pieces. These will be the marshmallow halves. Dust them with powdered sugar and let them sit on the counter for 10-12 hours.
- Place the dried applesauce in pairs. This will give you 27 servings of this apple treat.

Tips for preparing this dish
1. To ensure your homemade apple marshmallows are delicious and hold their shape well, follow these tips from professional chefs on how to make this confection: 2. Use sweet and sour varieties of apples, such as Antonovka, Bely Naliv, and Renet. Puree from these fruits gels well because they are rich in pectin, a natural thickener. Furthermore, these apple varieties impart a pleasant tartness to the marshmallow. 3. Don't boil apples to make this treat. The puree from these fruits will be watery and not thick enough. Its flavor is less intense than that of baked apples. 4. After adding sugar to the apple puree, bring it to a boil and simmer for 1 minute. This will help the apple puree thicken. 5. Don't substitute gelatin or pectin for agar-agar. Otherwise, the marshmallow won't hold its shape and will be soggy inside. When preparing agar-agar syrup, add sugar only when the mixture is hot. Otherwise, the confection will not set. 6. Before piping in the marshmallows, make sure the apple mixture is thick and dense enough to hold its shape well. 7. Form the marshmallows as quickly as possible. You must do this before the apple mixture cools, as agar-agar hardens at 40°C. 8. Treat yourself and your family to delicious homemade apple marshmallows. This treat is easy to make. Follow the recipe carefully for a perfect outcome.
