Peel the apple, cut out the core and cut into small cubes.
Take a deep bowl, beat the eggs, mix with sugar and salt.
Warm the kefir slightly in the microwave. Pancakes made with warm kefir will be fluffier. Pour the warmed kefir into the eggs and mix with a spoon or whisk. Don't beat, just mix until smooth.
Add baking powder and sifted flour to the kefir-egg mixture.
Mix the dough, add vanilla and apple pieces. Mix all ingredients again and let the dough rest for ten minutes.
Before frying, heat a frying pan. Add a little melted butter and pour a tablespoon of apple batter into the pan. Form five pancakes.
First, fry the pancakes on one side, then flip them over. Reduce the heat, cover the pan with a lid, and fry for 2-3 minutes. This will ensure the pancakes are fluffy and cooked through.
Blot excess oil from the pancakes on paper towels.
You can serve the finished fluffy pancakes with any jam, sour cream or honey.
