Place the softened butter in a deep bowl and add the sugar. Using a fork, thoroughly mix the ingredients. You don't need a mixer for this step; the ingredients will mix together just fine.
Add the cottage cheese and egg mixture to the mixture and mash again with a fork. The mixture should be smooth and not too thick.
In a separate container, pour flour, add baking powder and salt, mix all ingredients.
Then, sift the resulting mixture through a sieve into the bowl with the cottage cheese. Sifting will help remove any debris from the mixture and also aerate the wheat flour. This will make the pies fluffier.
Now start kneading the dough. First, mix it with a spoon, then use your hands. The dough contains oil, which will prevent it from sticking to your hands. Once the dough is smooth, place it in a bowl, cover with plastic wrap, and begin preparing the filling.
Large apples should be washed, core and seed removed, and peeled. Then cut into small pieces.
In a frying pan, mix apples with sugar, starch and cinnamon.
Place the pan over high heat and let the apples simmer for five minutes.
Roll out the dough and cut into circles.
Place the filling on the circles and form into pies, pinching the edges in any way.
Line a baking sheet with paper and place the pies on it.
Brush the pies with beaten egg using a pastry brush. This will ensure a golden brown crust on the finished pies.
They need to be baked in the oven for 20–25 minutes at a temperature of no more than +180 °C.
